In spring and summer, there’s nothing better than enjoying a meal outdoors with friends and family; today, al fresco dining has never been more popular, given the rise in popularity of gourmet takeout and prepared picnic baskets. For those who eschew all animal products, though, outdoor vegan meals usually consist of mundane veggie sandwiches and a fruit salad. But no more!

Carla Kelly is an accomplished vegan cook and baker with two previous cookbooks under her belt; she also loves to prepare delicious, casually elegant vegan meals for backyard barbecues, picnics in the park, or parties at the beach. Vegan al Fresco is loaded with beautiful appetizers such as Peanut Potato Salad and Tomato and Olive Tarts, inventive sandwiches including Pita Po’Boys, and amazing grilled dishes like Sweet Chipotle Tempeh with Berries and Cedar Planked Rosemary and Lemon Tofu. Finish off your meal with Strawberry and Basil Scones, Maple and Walnut Cheesecake, or some crazy good vegan ice creams.

The book includes prep and cooking times for each recipe, as well as advice on portability, food safety issues, and menu suggestions for special occasions. Full-color throughout, Vegan al Fresco offers delectable and sophisticated ways for vegans to enjoy the great outdoors.

Carla Kelly, a vegan for almost ten years, has cooked at hotels around the world. She is the author of two previous cookbooks, Quick and Easy Bake Sale and Quick and Easy Vegan Slow Cooking, and operates the food website The Year of the Vegan (veganyear.blogspot.ca).

Not a bad book at all…just not in step with my personal taste
I am a pretty picky vegan eater. I was hoping for more traditional picnic/family bbq recipes, rather than so many dishes that rely on tofu or feature ingredients like millet, spelt, or capers and edamame together. If you are an adventurous eater or like trendy ingredients like roasted beets and quinoa, disregard my lack of enthusiasm and go for it. It is well-written and features a wide array of tastes and influences.

Buy it for the ice cream recipes then enjoy all the other wonderful recipes!
I have to say flat out the ice creams in this book are amazing! Easy to make especially of you have an ice cream maker but even if you don’t, the author provides instructions for that too. They don’t use any hard to find ingredients and are the creamiest tastiest I’ve ever had! You will never want to buy it again! The book is filled with so many more wonderful recipes as well thouh perfect for any day but especially great for this time of year, picnics and bbqs. I highly recommend the Creamy Macaroni Salad. It goes perfect with the Seitan Po’Boy that is made with these little Twice Fried Seitan Bites that are addictive! We also made and loved the Cider Batter Tofu which we had as fish n’chips one night. The marinade isn’t fishy at all which is perfect for me since I never liked the stuff but uses a combo of lime zest and tamari and comes out perfectly tasty and the batter is perfectly crisp! I fed it to omnis and vegans and everyone was mmming around the table. Another favourite so far has been the Maple Walnut Cheesecake. I’ve never had any luck making vegan cheesecake but this recipe is perfect. It’s rich, creamy and perfectly maple flavoured. As soon as we tasted it, we knew it would be one of those cakes that was requested for birthdays! There are loads of dips, dressing and sandwich fillings that will liven up any picnic blanket spread as well as cookies, desserts and drinks to enjoy. The layout is cheerful and bright, the photos are lovely and make the food pop off the page. I love the family shots with Carla and her family, makes it feel personal and like being invited into their house for lunch. I love the include allergen symbols as a parent of a child with food allergies and someone that cooks often for others, it’s nice that they are clearly marked for menu planning. The author also includes loads of suggestions for how to easily change up a recipe which I love. Make it once then have some fun with it and switch things up. I would definitely recommend this book and I can’t wait to see what Carla Kelly’s next project will be.

Creative vegan recipes for picnics and BBQs
I have been working my way through it this summer and absolutely loving it. The theme of the cookbook is “happy and healthy recipes for picnics, barbecues and outdoor living” and it definitely delivers on its byline. The cookbook is broken down into finger foods and appetizers, sauces/dips, sandwiches/spreads, salads, foods to grill, baking, desserts and drinks. Plus, it also has tips for packing picnics and hosting meals outdoors. All recipes are vegan. Most are creative vegan spins on traditional American fare. Samosa spring rolls, caper and edamame dip, chipotle and peanut butter hummus, peanut butter adobo barbecue sauce, cilantro barbecue sauce, jalapeño and cherry jam, quinoa and avocado ‘slaw, peanut potato salad, lime and ginger tahini tofu skewers, strawberry and basil scones, chilled blueberry chocolate pie and vanilla ice cream with cherry pie filling. Also, let’s not forget drinks like ginger lemonade. Trust me, there are a ton of fun recipes here.Personally, I have tried the mojito-inspired tofu which was fabulous. I kept the leftover marinade to add after grilling. I also really liked the zucchini sticks which were simple yet complex and a fun way to eat zucchini. I also made the potato pickle salad but swapped green beans for the asparagus. An usual twist on a classic. I look forward to trying many more recipes. If you are looking for boring, this is not the book for you.

I feel the one star review on this book is a bit unjust so felt compelled to write my own. This book is by an American author as are many top selling vegan cookbooks so most measurements etc are in cups rather than grams however a set of measuring cups from a well know home megastore costs mearly pounds and solves all measurement problems. If not its easy to search how to convert cups to weights. The recipes are well thought out and inventive and of the one’s I’ve tried have all worked well (the potato salad with peanut butter was a great hit!)As for ingredients I didn’t find anything unusual in here compared to any other vegan cookbook (and I have a few!) so again this shouldn’t cause most people a problem however may not be the best book for vegan novices.Overall great!

This book says USA & CANADA! So if your in the UK then this book is useless because the ingredients (one or two ingredients in as good as all the recipes) can’t be purchased from any supermarkets in the UK. I did manage to find a recipe that I could do and that was the Chocolate Peanut Chunk Cookie and the roasted salted peanuts tasted horrible in these cookies, it just doesn’t work!
