Also check out Justin and Amy’s brand-new book, The Chubby Vegetarian: 100 Inspired Vegetable Recipes for the Modern Table (Susan Schadt Press, 2016). Anyone not adequately acquainted with the South’s true culinary terrain might struggle with the idea of a Southern vegetarian. Because isn’t the South one big feast of meaty indulgence? Don’t vegetables play a supporting role to fried chicken and bacon on a Southern table? Justin Fox Burks and Amy Lawrence turn that notion on its head by recasting garden bounty as the headlining act on a plate. In a region distinguished by ideal growing conditions and generations of skilled farmers, Southern-style vegetarian cooking is not only possible, it’s a pursuit brimming with vine-ripened possibility.
Grab a chair in Burks and Lawrence’s kitchen and discover modern recipes that evoke the flavors of traditional Southern cooking, with techniques and ingredients loved so dearly throughout the region:
Lemon Zest and Thyme Pimento CheeseGrilled Watermelon and Tomato Salad with Honey Lime Vinaigrette Okra Fritters with Creole Mustard SauceVegetarian Red Beans and Rice with Andouille EggplantRoast Beet Salad with Sea Salt Granola and Honey Tarragon DressingGrilled Peach Ice CreamWhether you’re a devoted plant-eater or a steadfast omnivore, The Southern Vegetarian Cookbook will help you shift vegetables from the outskirts of your plate into main course position. Eating your vegetables has never been more delicious.

A Great Cookbook…for non-vegetarians!
We’ve had this cookbook for about a month now, and while we are far from exhausting it, we’ve cooked enough recipes out of it to give it a review.Neither of us are vegetarians, though we do try to cook and eat healthily. The most complimentary thing I can say about this cookbook is that it is by no means a vegetarian cookbook. Yes, all the recipes are for vegetarian dishes, but this is food that anyone, vegetarian or not, would find easy to cook and delicious. The recipes are clearly written, the directions are easy to follow, and though they occasionally employ ingredients a little more exotic than the average person may have in their pantry, they are all readily available at a good grocery store, or easily substituted for. The book itself is beautiful, with lovely pictures of the food, and its unpretentiously written with a clear voice and the sort of evident grounding in family and history that make the best cookbooks a pleasure to read.We cannot recommend this book highly enough. If you love to cook, whether you are a vegetarian or not, buy this book. You won’t regret it.

The recipes are no fail, impressive and delicious – for vegetarians and meat eaters!
I started eating less meat about a year ago. The Southern Vegetarian offers some of the most delicious main course vegetable recipes I have ever tasted. The photos of the final dishes are so gorgeous! Just a few pages into this and my mouth was watering and I couldn’t wait to start trying them. The techniques for preparing these dishes are completely accurate and the results are foolproof and impressive, and most importantly delicious. Each week we pick at least one recipe from this book for our menu plan. My husband is the cook in the family, and the meat eater. I knew this book was the “go to” cookbook for us when my husband started trying the dishes without his usual “side of meat” to go along. Finally, two words: mushroom meat. This is my favorite recipe for the versatility. If you are a fan of really tasty vegetables, try this book. If you are attempting to find a way to eat less meat without sacrificing the joy of assembling beautiful, tasty and satisfying meals, try this book. And of course, if you are a vegetarian, The Southern Vegetarian is a MUST have.

Delicious fancy upscale southern food, but takes a long time to make
This book has a lot of really creative and flavorful recipes. It’s not country homecooked southern food like I expected, it’s more like upscale fancy southern restaurant food. We’ve tried the Porcini and Portabello Mushroom Bourguignon over Smashed Potatoes recipe and Tofu Almondine with White-Wine Butter Sauce. Both were delicious, perfectly proportioned spices, great texture, and very tasty. We would have tried more recipes, but the recipes take a really long time to make. Many recipes have at one or more additional smaller recipes that you have to make before you can finish the main recipe. It’s not for weekday cooking, more like weekend cooking when you have lots of time to spare. With a little trial and effort, we found a way to simplify the bourguignon recipe to half the cooking time/effort, with the same great taste. When we have time, we’ll try more recipes and try to simplify them as well. Flavors: 5 stars, time/effort to make the recipes: 2 stars.

Rejoice veggie lovers
Ever pick up a vegetarian cookbook and feel as if the authors are presenting recipes in a holier than thou tone, and you end up feeling ashamed that you maybe eat meat once in a while? Rejoice meat eating veggie lovers, because this is not one of those cookbooks. From the creators of the gorgeous and eclectic food blog chubbyvegeatrain.blogspot.com, comes this heavenly collection of dishes that transform down home southern vegetables into masterpieces of the modern vegetarian table. Forget your preconceived notions of the south being the bacon belt, perhaps no other region in the country boasts such deep vegetable roots as that of the south, the place where the original backyard vegetable garden was born. Described as a âfresh, fun, and slightly irreverent and joyful look at vegetables,â this cookbook is a feast for the eyes and the mouth. Intro includes an example of a well-stocked vegetarian pantry, and a list of essential kitchen tools for peeling, chopping, and blending your gardenâs goodies. Chapters are comprised of breakfasts and brunches, appetizers, soups and sandwiches, mains, desserts, drinks, and the âbasicsâ (sauces, doughs, crusts, salsas.) Flavor combinations here are extraordinarily unconventional yet mouthwatering. Terrific addition to the vegetarianâs cookbook collection, as well as the healthy southern foodie.

Great recipes but TONS of work.
I’ve really enjoyed the recipes made from this book. But so far, I’ve not made one that does not require making a separate recipes as one of the ingredients. Seriously, these recipes are just too much work. And the book fell apart after using it only a few times.

Good for vegetarians, flexitarians, and omnivores – basically, everybody
The Southern Vegetarian is not a preachy vegetarian bible. It is a collection of the authors’ dedication to eating well, eating healthy, and eating your veggies. Yes, it’s called The Southern Vegetarian, however it should be approached as more than a vegetarian cookbook. If you’re looking to refocus your meals, or the occasional meal, away from a protein-down approach – this book is for you. If you’re looking to make healthy, flavorful comfort foods at home – add this to your cookbook collection. If you’re a vegetarian or vegan that chooses to focus on vegetables rather than meat substitutes – just buy it.Recipes vary from super simple to slightly involved. It’s a great starter cookbook to hone your skills then explore something a little more technical. All instructions and ingredients -so far!- are well-thought out and thorough. Beautiful pictures too! So glad I bought it, sated and inspired!Highlights: The Chubby Vegetarian Gumbo, Curried Cauliflower Soup, Lemon Zest and Thyme Pimento Cheese, ooooo ooo wee, yall!

This is my favourite cookbook I’ve ever owned of any genre. Any recipes I’ve made have been a massive hit with vegetarians and meat eaters alike. The BBQ tofu pizza is a staple in our home during the summer months, and I keep the Memphis Spice rub in my pantry at all times.

I love this book. The recipes and originality are fantastic! Love the expresso gravy, as well as the miracle mushroom gravy! The only reason I’ve subtracted a couple of stars (which is a shame, ’cause I love this book!) is because the quantities in many of the recipes are off by a long run. Unfortunately, it’s not one of those books you can just make a recipe from for the first time, when you have guests, ’cause it might not turn out.Great recipes, original, creative, meatless adaptations of delicious southern dishes…just use common sense when making them, or you’ll end up having to throw away more than one dish. Annoying that recipes in a book that people pay good money for aren’t thoroughly tried, tested and checked…

The word “vegetarian” in the title belies the fact that a goodly proportion of the dishes are vegan, which is no bad thing. In fact, it could have been called “A Southern Cookbook”, since it places the emphasis on good, wholesome food, irrespective of whatever other label you care to add. Ignore the fact that some dishes are “meat-free replicas” of well-known dishes and cook them in their own right: the mushroom and aubergine (eggplant) “substitute” for minced (ground) beef is a worthy and versatile dish in its own right, while the meat-free version of a boudin sausage is excellent whether you’re a carnivore or just a plant-eater. Well worth the money.

This is an excellent cook book by a couple of on the ball southern cooks who really dish up some amazing American quick and easy meals, so tasty you want more and more. If you have no time for preparing long drawn out meals when you get in from work or those lunch snacks after an early morning shop, then this is your guide to heaven – quick and easy, tasty and delicious munching. Thank you America.
