One-Pan Mediterranean Diet Dinners to Welcome Summer (& Shopping List!)

Summer has unofficially started, which means it’s time to fill our plates with the season’s best produce. Pairing summer veggies with grains, lean meats and fish is an easy way to follow the Mediterranean diet, an eating pattern that helps reduce the risk of many chronic diseases. And, in alignment with the simplicity of summertime, this week’s dinners, whether they use a sheet pan, skillet or even just a large bowl, are made in one vessel and can be transferred right to your dinner plate.

Sunday: Balsamic Chicken with Roasted Tomatoes & Zucchini

This five-ingredient dinner is simple yet flavorful. A tangy balsamic-vinegar marinade does double duty as a seasoning for the vegetables, too. Serve it with some precooked brown rice, which you can microwave while the chicken and veggies cook.

Monday: Summer Skillet Vegetable & Egg Scramble

Breakfast for dinner is always so satisfying. For this easy scramble, you can use whatever veggies you have on hand—zucchini, bell peppers, mushrooms—just be sure to cut them into similar sizes for consistent cooking. Serve it with a whole-wheat baguette.

Tuesday: Lemony Lentil Salad with Feta

This salad starts with a flavor-packed dressing of lemon juice, dill, Dijon mustard and olive oil. Mix in canned (or home-cooked) lentils, some chopped veggies and crumbled feta, and it’s done. Serve the salad with whole-wheat naan to meet our Mediterranean diet parameters.

Wednesday: Sheet-Pan Roasted Salmon & Vegetables

Salmon roasted with bell peppers, potatoes and tomatoes makes a vibrant summer dinner. It all comes together on the same sheet pan, and parsley, oregano and Kalamata olives ensure that it’s flavorful. Salmon is packed with omega-3 fatty acids, which can help you absorb certain nutrients and can help reduce the risk of some cancers.

Thursday: Arugula, Chicken & Melon Salad with Sumac Dressing

Summer fruit is also having its moment. Melon stars in this arugula salad with shredded chicken. A punchy dressing made with sumac and lemon juice brings everything together, while crumbled feta adds a little brininess and creaminess.

Friday: Sheet-Pan Caprese Pizza

Using store-bought dough means you can have this pizza on the table in just 25 minutes. A topping of juicy cherry tomatoes and fresh mozzarella cheese is perfect for a summer dinner. Some fresh basil and balsamic glaze on top make it taste just like a caprese salad. Serve the pizza with mixed greens (tossed with whatever dressing you have in the fridge) for a dinner that meets our Mediterranean diet parameters.
