
BBQ Chicken Stuffed Zucchini

Zucchini ‘boats’ stuffed with BBQ chicken, onions, peppers, and corn, topped with plenty of melted cheese!
ingredients
- 4 medium zucchini
- 1 tablespoon oil
- 1/2 pound chicken, cut into small pieces
- 1/2 cup red onion, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup corn (fresh or thawed)
- 1/4 cup hot peppers, sliced or chopped (optional)
- 1/4 cup BBQ sauce
- 1 cup cheese (cheddar and/or monterey jack), shredded
- 1 tablespoon cilantro, chopped (optional)
directions
- Cut the zucchini in half lengthwise, and hollow them out (using a spoon or melon baller) until the zucchini is about 1/4 inch thick, reserving and chopping the zucchini from the inside.
- Heat the oil in a large pan over medium heat, add the chicken and cook, about 6-8 minutes.
- Add the chopped zucchini, onion , and pepper and cook until tender, about 8-10 minutes.
- Add the corn, hot peppers, and BBQ sauce, mix and turn off the heat.
- Stuff the chicken mixture into the hollowed out zucchini halves, sprinkle on the cheese, place them on a baking sheet, and bake in a preheated 350F/180C oven until the zucchini is tender, about 30-40 minutes.
Option: Add 1/2 cup pineapple, diced!
Option: Add 1/4 cup bacon, cooked and crumbled.
