Fantastic Cookbook!
I am a food photographer who owns hundreds of cookbooks, so needless to say, I’m a bit hard to impress. Well, much to my surprise, this cookbook (third edition) has become one of my most favorite in my collection. Why? The photography is stunningly rendered on dark pages with nearly a photo for every recipe, the recipes are simple yet adventurous with packed flavors, the ingredients are straight-forward real ingredients that I already have in my home, the color-coding makes for an easy reference, the “works best with”, “consistency”, and “flavor” guides are extremely helpful, the book lays open on the counter unassisted, and not to mention, the plethora of recipes that covers flavor profiles and combinations to thrill any palate. While this cookbook has become one of my favorites, I think there is some room for improvement, but none of these minor suggestions warrant any reduction in stars, just my personal observations in hopes of them being included in the next edition.1. The blue and green type can be difficult to read on the dark background, though I love the dark pages. I would suggest either a while outline of the font or a drop shadow accompanying the colored type or just opt for a solid white font.2. As part of the “guides” at the top of the pages, I would love to see the author’s personal recommendations for the type of hardwood to use to smoke a particular recipe. Different woods impart such a vast array of flavors and I would love to hear the author’s experiences.3. The index is vast and well thought-out, but unfortunately, it is very difficult to read in such a tiny font…it’s maybe a 4 or 5 pt? I would increase the size of the font in future editions for readability’s sake.4. Finish cook temps for each food would also be a nice inclusion.Thank you for such a wonderful cookbook!

Love it!
This is an outstanding book for rub recipes. Full color photos. Heavy duty book, not some slimmy paperback. I highly recommend.

Watch out for recipe typos!
Beautiful book, beautiful pictures. Be careful of recipe typos. See page 116-117. No mustard listed in the ingredient list or in instructions. I have to assume a typo as this is a â maple and mustardâ pork tenderloin. Book is full of what looks to be some really nice rubs and marinades. Iâm only giving it a rating of 4 because of the typo. Aside from that so far, a lovely book of recipes.

Excellent for SIMPLE folks looking to add some pizzazz to their foods!
SO many times these cookbooks will give you a ton of recipes (most of which have ingredients we do not have in our cabinets). Mind you, Im a salt/pepper, garlic & onion powder, seasoning salt, and some other odds and ends type person. We don’t complicate things. We don’t have sophisticated recipes, we don’t get fancy or bougie with our foods. We WANT to, but I buy 1 spice/seasoning for 1 recipe and that poor thing sits for 6 months because I have no idea how to use it “free hand”. I NEED recipes in order to use up the rest of that item. This book is great! You can look up recipes by ingredient, protein, or method of use (brine, marinade, etc). It’s color coded on the side to indicate where brines, marinades, butters, etc are located. On each recipe it pairs it with it’s flavor profile (if you’re in the mood for something sweet, salty, savory, etc), and what protein it pairs well with! The best thing of all…….as a simpleton in the spice cabinet-I HAVE EVERYTHING FOR MOST OF THESE! lol. Salt, pepper, soy sauce, worchestishire sauce, vinegars, honey (to name a few). Very basic with the ocassional “might have to buy” item. And since many of the recipes have a lot of the same base ingredients, I can go out and purchase something and try new things and not have it sit around for eons.Definitely recommend if you’re anything like us in the kitchen but really want some foods that are brag worthy! I haven’t tried any recipes yet, but looking forward to actually being able to use this one!

Molto basico. Non mi ha dato particolari idee per creare dei rub più particolari. Di fatto ripercorre molto ricette classiche…

Great book with some very nice recipes for basting, sauces and rubs. Perfect for me as I use a smoker most weekends and these rubs and sauces are perfect. One complaint, which is annoying is that some of the ingredient wording is printed on pages that are hard to read due to being close in colour to the background
